I made some pineapple and cream ice cream the other day and chose to leave out the juice from the cooked pineapple. Because I make several pints of this ice cream at once (I love it so much), I had about 2 cups of pineapple juice left over. I could drink it, but then I thought I might be able to make a sorbet from the juice. Normally I make pineapple sorbet using the juice and meat of a pineapple, but maybe the juice would be nice, too.
So I consulted the web, could not find any such recipes, and so I created my own. The people who tried this enjoyed the smooth texture and how it melted in their mouths. It has a strong, delicious pineapple flavor without the stringiness which can come with including the pineapple meat.
Ingredients
- 2 cups pineapple juice
- Option: juice from the sous vide pineapple
- Option: canned pineapple juice (the can will impart a slight tinny flavor to this)
- 2 tablespoons agave syrup
- 1 tablespoon lime juice
Instructions
- Combine the pineapple juice, agave syrup, and lime juice
- Pour into Ninja CREAMi pint
- Freeze for 24 hours
- Process on "Sorbet"
- Serve and enjoy!
