Variations on a Theme: Pineapple

When serving ice cream, I love planning out the flight of flavors we serve up. One you might try is variations on theme of pineapple.

As people try these, you can ask them to observe the flavor and texture of each, making offering up what they like and do not like about each. It can be interesting to find out what people like and don't like. What they gravitate toward, and ideas they might have for future ice creams.

You will likely want to still put these into a sequence. I recommend keeping the cream-based ones grouped and the sorbet ones grouped. You might move from no meat to meat and back to no meat, again. Here are each of mine listed in those groupings and sequences:

  1. Pineapple juice sorbet 
  2. Pineapple sorbet: sous vide
  3. Pineapple sorbet: canned
  4. Pineapple and cream: meat/pulp and juice
  5. Pineapple and cream: meat/pulp only

The last two are the same recipe, just with or without the pineapple juice. You can take these other recipes and try adjustments of your own.

You might even add other flavors to the flight which combine well. For example, blueberries and cream pairs beautifully with pineapple and cream.
